Roasted Tomato Basil Soup

A creamy and flavorful soup made with roasted tomatoes and fresh basil.

Ingredients

  • 3 lbs tomatoes
  • 1/4 cup olive oil
  • 4 cloves garlic
  • 1 cup chopped fresh basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp butter

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Chop the tomatoes into large chunks and place them on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper, then toss to coat.
  4. Roast in the preheated oven for 20-25 minutes, or until the tomatoes are tender and lightly caramelized.
  5. Remove the tomatoes from the oven and let them cool slightly.
  6. Peel the roasted tomatoes and puree them in a blender or food processor until smooth.
  7. Sauté the basil in a pot with a little olive oil over medium heat, until fragrant, about 1-2 minutes.
  8. Add the pureed tomatoes, and stir to combine.
  9. Bring the mixture to a simmer and cook for 10-15 minutes, or until heated through.
  10. Season with salt and pepper to taste, then serve hot.
