  • 1 cup quinoa
  • 2 cups water
  • 2 tbsp olive oil
  • 1 large red bell pepper seeded and chopped
  • 1 large yellow bell pepper seeded and chopped
  • 2 large zucchinis chopped
  • 1 large red onion chopped
  • 2 cloves garlic minced
  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • 2 tbsp lemon juice

Method
 

Instructions
  1. Preheat the oven to 400F
  2. Toss the bell peppers, zucchinis, and red onion with olive oil, salt, and pepper, and roast for 25-30 minutes
  3. Cook the quinoa according to package instructions
  4. In a large bowl, combine the roasted vegetables, cooked quinoa, mixed greens, cherry tomatoes, and feta cheese
  5. Drizzle with lemon juice and toss to combine
