Salmon and Asparagus

Grilled salmon with roasted asparagus

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 pound fresh asparagus
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 2 lemons (for juice)
  • 1/4 cup white wine (optional)
  • 1/4 cup chicken broth
  • 2 tbsp butter
  • 1/4 cup grated parmesan cheese
  • Fresh parsley (for garnish)

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Season the salmon with salt and pepper.
  3. Toss the asparagus with olive oil, salt, and pepper on a baking sheet.
  4. Roast the asparagus in the oven for 12-15 minutes, until tender.
  5. Place the salmon on a separate baking sheet lined with parchment paper.
  6. Bake the salmon in the oven for 12-15 minutes, until cooked through and flakes easily with a fork.
  7. Serve the salmon with the roasted asparagus.
