- Preheat oven to 400°F (200°C).
- Season the scallops with salt and pepper.
- Sear the scallops in a hot skillet with a small amount of oil for 2-3 minutes on each side, until golden brown.
- Remove the scallops from the skillet and set aside.
- Reduce the heat to medium and add a small amount of oil to the skillet if necessary.
- Add aromatics (such as garlic or shallots) to the skillet and sauté until fragrant.
- Pour in the white wine and bring to a simmer.
- Scrape the bottom of the skillet to release any browned bits.
- Reduce the white wine by half, stirring occasionally, until the sauce has thickened slightly.
- Stir in any additional ingredients (such as butter or herbs) to finish the sauce.
- Return the scallops to the skillet and coat with the white wine sauce.
- Serve the scallops hot, garnished with fresh herbs if desired.
