- Preheat oven to 400°F (200°C)
- Season chicken breast with salt and pepper
- Slice chicken breast into thin strips
- Heat a large skillet over medium-high heat
- Add chicken to the skillet and cook until browned, about 5-6 minutes
- Remove chicken from the skillet and set aside
- Add sliced onions and bell peppers to the skillet and cook until they start to soften, about 3-4 minutes
- Add cooked chicken back into the skillet and stir to combine with onions and bell peppers
- Transfer the chicken and vegetable mixture to a sheet pan
- Bake in the preheated oven for 10-12 minutes, or until the chicken is cooked through and the vegetables are tender
- Remove from the oven and serve hot
