- Season the shrimp with salt & pepper. Begin to heat olive oil in a large/deep skillet.
- Add the shrimp to the skillet, sauté until pink and cooked through. Carefully remove from skillet and set aside for now.
- Add the sliced onion, bell peppers and chopped jalapeño to the skillet. Continue to sauté until tender.
- While the vegetables are cooking, open, drain and rinse the canned black beans and corn.
- Return the shrimp to the skillet along with the corn and black beans.
- Stir in the taco seasoning.
- Continue to sauté everything for another few minutes. Then remove skillet from heat.
- To assemble the Shrimp Taco Bowls, simply layer the taco mixture over your preferred base. This could be rice, cauliflower rice, or a bed of lettuce. Then garnish with fresh cilantro.
