Soft Gingerbread Cookies

Ingredients

  • 2 1 /4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1 cup unsalted butter at room temperature
  • 3/4 cup white granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 2 tbsp molasses
  • Decorative icing or frosting (optional)

Method
 

Instructions
  1. Preheat oven to 375°F (190°C)
  2. Combine ingredients in a large bowl until a dough forms
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes
  4. Roll out the dough on a floured surface to about 1/4 inch thickness
  5. Cut into desired shapes using a cookie cutter
  6. Place the cookies on a baking sheet lined with parchment paper, leaving about 1 inch of space between each cookie
  7. Bake for 10-12 minutes, or until the edges are set and the centers are just slightly soft
  8. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes
  9. Transfer the cookies to a wire rack to cool completely
  10. Serve the soft gingerbread cookies warm, or store them in an airtight container for up to 5 days
