  • 1 pound large shrimp peeled and deveined
  • 1/2 cup lime juice
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 8 -10 corn tortillas
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh cilantro
  • 1 jalape ño pepper sliced

Method
 

Instructions
  1. Marinate the shrimp in a mixture of lime juice, olive oil, garlic, cumin, smoked paprika, and cayenne pepper.
  2. Prepare the slaw by mixing together the shredded cabbage, carrots, honey, lime juice, and chopped cilantro.
  3. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  4. Assemble the tacos by placing a few shrimp on each tortilla, followed by a spoonful of the slaw, and topping with cilantro, a slice of jalapeño, and a wedge of lime.
  5. Serve immediately and enjoy!
