  • 4 cups diced watermelon
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint
  • 2 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste

Method
 

Instructions
  1. Chop the watermelon into small cubes, about 1 inch in size.
  2. Crumble the feta cheese into small pieces.
  3. Chop the fresh mint leaves finely.
  4. Whisk the apple cider vinegar with a pinch of salt and a few grinds of pepper in a small bowl.
  5. Combine the chopped watermelon, crumbled feta cheese, and chopped fresh mint leaves in a large bowl.
  6. Drizzle the whisked apple cider vinegar mixture over the watermelon mixture.
  7. Toss gently to combine, until the watermelon is well coated with the dressing.
  8. Season with salt and pepper to taste.
  9. Serve immediately, garnished with additional mint leaves if desired.
