Spinach & Feta Quiche

  • 2 cups fresh spinach leaves
  • 1 1 /2 cups heavy cream
  • 1/2 cup grated feta cheese
  • 1/2 cup grated cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 2 tbsp unsalted butter melted
  • 2 large eggs
  • 1 pie crust (homemade or store-bought)
  • 2 1 /4 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup cold unsalted butter cut into small pieces
  • 1/4 cup ice-cold water

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Prepare the pie crust and place it in a tart pan with a removable bottom.
  3. Whisk together eggs, salt, and pepper in a large bowl.
  4. Sauté the spinach in a pan until wilted, then set aside to cool.
  5. Crumble the feta cheese into small pieces and add to the cooled spinach.
  6. Combine the egg mixture, spinach, and feta cheese, and mix well.
  7. Pour the egg mixture into the prepared pie crust.
  8. Bake for 35-40 minutes, or until the edges are golden brown and the center is set.
  9. Remove from the oven and let cool for 10 minutes before serving.
  10. Serve warm, garnished with fresh herbs if desired.
