Spinach Parmesan Pasta

  • 12 oz (340g) pasta
  • 2 cups fresh spinach leaves
  • 1 cup (250g) grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup (250ml) heavy cream
  • 1 cup (115g) shredded mozzarella cheese
  • 2 cloves garlic minced

Method
 

Instructions
  1. Preheat oven to 375°F (190°C)
  2. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente, about 8-10 minutes
  3. Drain the cooked pasta and set it aside
  4. Sauté garlic in olive oil over medium heat until fragrant, about 1 minute
  5. Add fresh spinach leaves to the garlic and oil mixture, cooking until wilted, about 2-3 minutes
  6. Combine cooked pasta, wilted spinach mixture, and grated Parmesan cheese in a large bowl, tossing to combine
  7. Transfer the pasta mixture to a baking dish and top with additional Parmesan cheese
  8. Bake in the preheated oven for 15-20 minutes, or until the top is golden brown and the cheese is melted and bubbly
  9. Remove from the oven and let it rest for a few minutes before serving
  10. Serve hot and enjoy
