  • 2 cups scrambled eggs
  • 1 cup cooked sausage
  • 1 cup cooked bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup canned black beans drained and rinsed
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 2 tbsp chopped fresh cilantro
  • 2 large flour tortillas
  • Salt and pepper to taste
  • 1 tsp ground cumin
  • 1/4 tsp paprika
  • 1 cup diced fresh tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup diced fresh cilantro
  • 1 jalape ño pepper seeded and finely chopped
  • 2 tbsp lime juice
  • 1 cup sour cream
  • 1 tsp lime juice
  • 1/2 tsp ground cumin

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Crack eggs into a bowl and whisk them together with a fork until well beaten.
  3. Heat a non-stick skillet over medium heat and add a small amount of oil.
  4. Pour the egg mixture into the skillet and scramble the eggs until they are cooked through.
  5. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  6. Assemble the burrito by placing a portion of the scrambled eggs onto the center of a tortilla.
  7. Add any desired fillings, such as cheese, salsa, or cooked meats, on top of the eggs.
  8. Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly.
  9. Serve the burrito hot, with any desired toppings or sauces.
