Ultimate Breakfast Burritos

A delicious breakfast burrito filled with scrambled eggs, sausage, and cheese.

Ingredients

  • 8 large flour tortillas
  • 1 lb sausage
  • 1 large onion (chopped)
  • 3 large bell peppers (chopped)
  • 4 large eggs
  • 1 can (16 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • Salt and pepper (to taste)
  • 2 tbsp olive oil
  • 1 cup diced fresh tomatoes
  • 1/2 cup diced red onion
  • 1 jalape ño pepper (seeded and finely chopped)
  • 1 lime (juiced)
  • 2 cloves garlic (minced)

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Crack eggs into a bowl and whisk them together with a fork until well-beaten.
  3. Heat a non-stick skillet over medium heat and add a small amount of oil.
  4. Pour the egg mixture into the skillet and scramble the eggs until they are cooked through.
  5. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  6. Assemble the burritos by spooning the scrambled eggs onto the center of a tortilla and adding any desired fillings.
  7. Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly.
  8. Place the burritos on a baking sheet and bake in the preheated oven for 5-7 minutes, until the tortillas are lightly browned and the fillings are heated through.
  9. Remove the burritos from the oven and serve hot.
