  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded White American cheese
  • 1/2 cup half-and-half
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1/4 cup chopped fresh cilantro
  • 1 jalape ño pepper diced

Method
 

Instructions
  1. Preheat oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a saucepan over medium heat.
  3. Add 1/2 cup of half-and-half and 1/2 cup of shredded cheese, stirring until smooth.
  4. Stir in 1 teaspoon of paprika and 1/2 teaspoon of cayenne pepper.
  5. Transfer the mixture to a baking dish.
  6. Bake for 20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for 5 minutes.
  8. Stir in 1/4 cup of chopped fresh cilantro.
  9. Serve warm, garnished with additional cilantro if desired.
