  • 1 cup cooked black beans
  • 1/2 cup cooked chickpeas
  • 1/4 cup rolled oats
  • 1/4 cup finely chopped onion
  • 1 minced garlic clove
  • 1/4 cup grated carrot
  • 1/4 cup grated zucchini
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Combine black beans, oats, and chopped vegetables in a bowl until well mixed.
  3. Add egg and feta cheese to the bowl and mix until a thick paste forms.
  4. Shape the mixture into 4-6 patties, depending on desired size.
  5. Place the patties on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and firm to the touch.
  7. Assemble the burgers on a whole-grain bun with lettuce, tomato, and any desired condiments.
  8. Serve immediately and enjoy.
