  • 5 lbs steak
  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic minced
  • 1/4 cup lemon juice

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Season the steak with salt and pepper on both sides.
  3. Sear the steak in a hot skillet with oil over high heat for 2-3 minutes per side, until a nice crust forms.
  4. Finish cooking the steak in the preheated oven for 8-12 minutes, until it reaches the desired level of doneness.
  5. Let the steak rest for 5 minutes before slicing it thinly against the grain.
  6. Prepare the meal prep bowls by adding a portion of sliced steak to each bowl.
  7. Add any desired toppings, such as roasted vegetables or a fried egg, to each bowl.
  8. Refrigerate the meal prep bowls for up to 3-5 days, or freeze for up to 2 months.
  9. Reheat the steak and any toppings as needed, and serve hot.
