  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup whole milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Food coloring (red orange, yellow, green, blue, purple)
  • 1 cup heavy cream
  • 2 cups powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • Sprinkles or nonpareils for decoration

Method
 

Instructions
  1. Preheat oven to 350°F (180°C).
  2. Mix cupcake batter ingredients until well combined.
  3. Divide batter evenly among cupcake liners.
  4. Bake for 18-20 minutes, until a toothpick inserted comes out clean.
  5. Allow cupcakes to cool completely.
  6. Prepare rainbow-colored frosting by mixing and matching food coloring.
  7. Frost each cupcake with a generous amount of rainbow frosting.
  8. Decorate with additional rainbow colors, if desired, to resemble a rainbow.
