- Preheat oven to 425°F (220°C)
- Cut the cabbage into 1-inch (2.5 cm) thick slices
- Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes
- Remove the bacon from the skillet and set aside on a paper towel-lined plate
- Add the cabbage slices to the same skillet with the bacon drippings and sauté for 2-3 minutes on each side, until slightly browned
- Transfer the cabbage slices to a baking sheet lined with parchment paper
- Top each cabbage slice with a piece of cooked bacon
- Roast in the preheated oven for 20-25 minutes, until the cabbage is tender and caramelized, flipping halfway through
- Serve hot, garnished with additional bacon if desired
