Spring Vegetable Frittata

Ingredients

  • 1 cup diced spring onions
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Method
 

Instructions
  1. Preheat oven to 375°F (190°C)
  2. Chop the spring vegetables into small pieces
  3. Sauté the chopped vegetables in a skillet over medium heat until they are tender, about 5 minutes
  4. Whisk together eggs and a pinch of salt until well combined
  5. Pour the egg mixture over the sautéed vegetables in the skillet
  6. Cook the egg mixture over medium heat, until the edges start to set, about 2-3 minutes
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are almost set
  8. Remove the skillet from the oven and let it cool for a minute or two
  9. Slide the frittata out of the skillet onto a plate and serve hot
