Ingredients

  • 2 1 /4 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1 cup unsalted butter at room temperature
  • 3/4 cup white granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/4 cup crystallized ginger finely chopped
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Method
 

Instructions
  1. Preheat oven to 350°F (180°C).
  2. Mix flour, baking soda, and salt in a medium bowl until well combined.
  3. Cream butter and sugar in a large bowl until light and fluffy, about 2-3 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in molasses and grated ginger until smooth.
  6. Combine dry ingredients with wet ingredients, mixing until just combined.
  7. Pour batter into a greased 9x5-inch loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from oven and let cool in pan for 10 minutes.
  10. Transfer to a wire rack to cool completely.
